Job Description :
Maintaining of Administration attached to Food Safety, Quality, Control Testing & Inspections
* Select produce samples for food safety, time study, and quality control testing
* Assist with enforcing food safety program and procedures, GMP policy, and personnel hygiene policies
Responsible for both Quality and Hygiene at Retail / Kitchen Level.
* Responsible for quality checks for outgoing produce as well as returned products.
* Verify and communicate to appropriate departments any findings as relate to food safety and/or quality issues.

Personal Hygiene:
Critical Control Points System
- Control system procedures
- Evaluation of corrective actions
- Staff medical records updating system

Delivery and Storage
- Tracking system for control of supplier operating licenses.
- Daily checklist by shift for chillers temperature control.
- Control of dry store food rotation.
- Specification / quality / delivery records for perishable food items.

Document & Control
- Weekly checklist for Food Preparation / Storekeeper / Cost Control / Stewarding / Food Production.
- Monthly Food Safety Training report.
- Monthly Food Lab Test report.
- Chemical Supplier Group Audit report.

LICENSES OR CERTIFICATES
HACCP certification
First Aid / CPR certification


Designation : Kitchen Manager


Job Description :
Principle Responsibilities & Purpose: Responsible to oversee the kitchen activities and employees and providing customer service. Required to manage the operations of a kitchen in terms of managing food supplies, procurement and ensuring conformation to health and hygiene standards.

ESSENTIAL FUNCTIONS
* Ensure all food is prepared in accordance to the standards that govern the
establishment's procedures
* Ensure order accuracy and appropriate portions in order to make sure that
customers are satisfied at all times
* Look after all employees in terms of ensuring that they work in hygiene manner
and in accordance to set recipes
* Manage the cleanliness of the kitchen
* Manage inventory and ensure that all stock is maintained properly so there is no
problem at any time especially where customer order is concerned
* Manage the details of the event as far as food management is concerned
* Ensure conformity of standards
* Ensure service that is provided is much above par
* Keep up with offers and restaurant promotions
* Involved in the recruitment of kitchen employees and training them well
* Maintain costs and run the kitchen within budget requirements while keeping the
requirements of the establishment and customers

SAFETY REQUIREMENTS
Personal Protective Equipment (PPE) may be required when performing work duties that may
have the potential of risk to your health or safety. The company will provide the required
PPE. Team members will be trained in the proper use and care of any assigned PPE. It is
your responsibility to report defective, damaged or lost PPE, or equipment that does not fit
properly, to your Manager.
