Position Summary
Responsible for preparing smoked meats, seasonings and sauces per our smokehouse operation guidelines; ensure the superior quality and freshness of all smokehouse products. Understand health, safety, and sanitation regulations.
Minimum Requirements
Degrees
High School Graduate (Preferred) or Equivalent
Job Experience
Prior experience in restaurant or retail industry.
Responsibilities and Essential Duties
Responsible to have a complete understanding of the smoking process; ensure superior quality and freshness of all smokehouse meat products. Ensure meats are properly processed, prepared and know cooking times for all items to ensure correct doneness.
Responsible to make seasonings and sauces used in the smoking process.
Organize items for preparation in order to ensure meats are processed accurately and efficiently in order to minimize waste.
Responsible for understanding the health, safety and sanitation regulations related to the smokehouse.
Supervise other workers to maintain and clean equipment (i.e., smokers, blenders, utensils, etc.) and work area.
Handle spoiled/damaged products per established guidelines.
Notify management if products and supplies need to be ordered.
Have familiarity with all products carried in the department; know the differences in price, taste, preparation, use, etc.
Knowledge, Skills Abilities
Good English verbal communication skills with ability to communicate efficiently with customers. Good customer service and organizational skills. Ability to read and accurately follow recipes and directions. Ability to prioritize and work in fast paced environment. Ability to work flexible hours, including overtime, overnight operation, based on the needs of the department.
