Roles and Responsibilities
A/ Operations Management:
- To Check and to Ensure stores are open for business as per the schedule established.
- To Monitor Stores, Counters, Storages and Layout are maintained in proper condition (clean and organized before and after opening hours). Staffs grooming and staffs performance.
- To Check and to Approve all Supply Orders, issue Purchase Orders, and control all Receipt Notes and confirm them.
- To Monitor and Guarantee Month-end Closing Inventory is accurate: theoretical stock vs. physical stock.
- To Manage weekly cash collection, control, and bank deposits.
- To Maintain relationship with airlines and to Manage the use of our issued coupons for the passengers
- To Maintain open communications with the Airport Management Team.
- To Prepare security clearance for staff working in airside.
- To Maintain warmth relationship with team members, clients, and customers.
- To review and to analyze monthly PNL results and to systematically look for room for improvements (cost of sales, labor cost, Capex and depreciation, etc.) on work processes, monitoring and monthly results.
- To guarantee Group QHSE Rules are followed by all staffs and maintained at all times.
- To implement the group stock management system to our activity at the airports.
B/ Project Management:
- To Reopen the Franchise Restaurants at the airports (PNH, REP, KOS), gradually as the business activity recovers and the sanitary situation dissipates.
- Follow the refurbishing plan of the restaurants, as per the agreed plan with the Client: timeline retro planning, with CAPEX investments, contractors work, delivered work as per specifications, etc.
- To Contact and to select contractors for the construction work to be performed, and to manage and to supervise all the construction process cycle.
- To Submit technical documentation for the Client Approval.
- To Discuss and adjust on designs, processes, timelines for each restaurants refurbishment work and targeted reopening dates, with the Client, Franchises Owners and Group.
- To Communicate project status / progress to the Client, the Partner and Group.
- To Master the projects phasing and to provide clear visibility of the project steps progress: when to do what, and why.
- To Communicate sales developments, such as sales linked to their concession fees
- To Coordinate and to manage designs approvals of all stores with the brand owner
- To Communicate menu changes / adjustment / special offers / price changes / etc.
- To Update brands owner of possible timeline to reopen the outlet, ensuring sufficient stocks are available and ready for our orders before the outlet opening.
- To Coordinate menus updates and rebranding the outlets, as per the latest designs, menus, and new items.
C/ Staffs Ramp-up & Hiring Plan:
- To Provide updated regular staff hiring plans to HR Department with the key’s skills requirements for upcoming Labor Staffs and Supervisors. Stores will reopen gradually, more travelers are expected to pass through the airports, and more staffs will be required to operate the outlets accordingly.
- To Coordinate staff hires and training, with minimum 1 month on-job-training for international brands.
Desired Candidate Profile
- Studies: Bachelor or Master Degree
- Work Experience:
- 5 years in multi outlets food related operations management (2 to 3 years minimum)
- and/or, 5 years in food related franchises management (2 to 3 years minimum)
- and/or, 5 years in food related franchises outlets refurbishment work supervision (2 to 3 years minimum)
- Tools: Microsoft Pack Office, knowledge of layout design tools / software desirable
- Language: Fluent in English (written and spoken); Chinese, Khmer, French desirable.
