Executive Chef / Kitchen Coordinator for Fraser Suites Sukhumvit, Thailand



    • Will be responsible for ordering supplies, food cost compilations, stores, stocks, HACCP stds, duty roaster, making menus, food pick up, garnishing & presentation of the final product
    • Should have knowledge of all Indian ingredients spices herbs sources rates and their relevance in Indian dishes
    • Should be able to talk / communicate with food writers and press
    • Ensure that quality culinary dishes are served on schedule and to see that any problems that arise are rectified.
    • Responsible for approving all prepared food items that leave his or her kitchen.
    • Determine production schedules and staff requirements necessary to ensure timely delivery of services.
    • Supervise and coordinate activities of cooks and workers engaged in food preparation.
    • Modify and create new menus as needed so that they remain effective for the purposes for the restaurant or other establishment.
    • Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food.
    • Monitor sanitation practices to ensure that employees follow standards and regulations.
    • Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
    • Check the quality of raw and cooked food products to ensure that standards are met.
    • Check the quantity and quality of received products.
    • Demonstrate new cooking techniques and equipment to staff.
    • Record production and operational data on specified forms.
    • Coordinate planning, budgeting, and purchasing for all the food operations within establishments such as clubs, hotels, or restaurant chains.

    Note : Do Not have to cook himself as very good Tandoori & Mughlai cuisine key craftsmen from India's best branded outlets are already handling the same very successfully
     
      Key Skills: 
      • Should be a 3 year IHM graduate or a diploma holder.
      • Should have excellent communication skills.
      • Should be proficient in computers - costing spreadsheets; pictorial menu designs. 
      • Should have 4 to 5 years supervisory experience in kitchen administration.
      • Can be from any cuisine stream / main or banquet kitchens however exposure in branded Indian cuisine outlets will be preferred.
      •  Be highly organized and operate within the highest standards of health & hygiene. 
      • Ability to work in a friendly team environment is of prime importance as well as a passion for quality and attention to detail.
      • Should provide contactable reference. 
      • Has managed a kitchen & staff before. 
      • Ability to work under pressure and to gain respect and authority.

      Terms & Conditions :
      • Two years contract.
      • Has to give 4 months notice if wanting to leave within the contract period.
      • Company can terminate contract with one month notice if not adhering to employment conditions / job expectations
      • Salary equivalent of Rs 60,000 p month (net). 
      • Currently Salary of suitable Candidate should be above Rs 25,000 to 30,000 p month.
      • Once a year return economy air fare to India or, reimbursement of cost of ticket if not availed.
      • 1 month leave per year or, reimbursement of salary / days not availed.
      • Free shared accommodation.
      • Free food (2 meals).
