Job Title: Indian Cuisine Chefs (Commis / Demi Chef de Partie)

Location: MGM Muthu Hotels and Resorts, Cuba Property


Job Summary:

The Indian Cuisine Chef will be responsible for creating and managing the Indian culinary offerings at our luxurious MGM Resort in Cuba. This role involves designing innovative menus, preparation and presentation of high-quality dishes, and deliver an exceptional dining experience to our guests.


Key Responsibilities:

  1. Menu Development:
    • Design and develop an authentic and innovative Indian menu that aligns with the resorts upscale brand.
    • Incorporate traditional and contemporary Indian dishes, ensuring a diverse and appealing selection.
    • Regularly update the menu to reflect seasonal ingredients and emerging food trends.
  2. Culinary Leadership:
    • Teach & train, and mentor a Jr team of kitchen line cooks, and kitchen assistants.
    • Foster a positive and productive work environment, promoting teamwork and high standards of culinary excellence.
    • Attend & conduct regular trainings on Indian cooking techniques, hygiene practices, and presentation standards.
  3. Quality Control:
    • Ensure the highest quality of food preparation, presentation, and taste.
    • Maintain consistency in the quality of dishes, meeting or exceeding guest expectations.
    • Oversee the proper handling and storage of ingredients to ensure freshness and safety.
  4. Operational Management:
    • Manage kitchen operations, including inventory control, ordering of ingredients, and supplier relationships.
    • Develop and manage kitchen budgets, ensuring cost-effective use of resources.
    • Ensure compliance with health, safety, and sanitation regulations.
  5. Guest Experience:
    • Create memorable dining experiences by delivering exceptional Indian cuisine and personalized service.
    • Address guest feedback and concerns promptly to enhance satisfaction and address any issues.
    • Engage with guests to promote Indian culinary traditions and share insights into the dishes.
  6. Innovation and Creativity:
    • Stay abreast of the latest trends in Indian cuisine and incorporate them into the menu.
    • Experiment with new recipes and presentation techniques to keep the dining experience exciting and fresh.

Qualifications:

  • Education: Culinary degree or equivalent qualification in Indian cuisine preferred.

  • Experience: Minimum of 7-10 years of experience in Indian cuisine, with at least 3 years in a leadership role.

  • Skills:
    • Expert knowledge of Indian cooking techniques, spices, and ingredients.
    • Strong team work and coordination, time management skills and multitasking abilities.
    • Ability to work in a high-pressure, fast-paced environment.
    • Fluent in English

Salary range between: 2 to 3 K USD Net Plus Free Accommodations and Free Food On Duty
